Creamy Italian Salad Dressing
This is an absolutely delicious dressing and of course, it can also be used as a dip. It's rich, creamy and full of flavor (and calories!).
Ingredients
- 1/2 cup mayonnaise (use a great mayo like Duke's or make it fresh)
- 1/2 cup olive oil (great ingredients make great food, use a really great Extra Virgin Olive Oil)
- 2 Tablespoons red wine vinegar
- 2 teaspoons lemon juice
- 1 teaspoon anchovy paste (available in a tube at your grocer, adds a rich background flavor, sub Worcestershire Sauce in a pinch)
- 1 scallion diced very fine (finely chopped or grated onion is OK too, about a tablespoon)
- 1 cup+ grated Parmesan cheese, add more as needed to get the consistency you like, also feel free to mix it up with some Pecorino and/or Asiago
- 1 tablespoon+ finely chopped parsley
- 2 Garlic cloves crushed
- 2 teaspoons sugar
- ½ teaspoon salt
- 1 teaspoon dried oregano
- ½ teaspoon coarse ground black pepper

Blend vigorously with a whisk, its best if refrigerated at least an hour before serving. Keeps about 5 days in the refrigerator.
