Creamy Italian Salad Dressing

This is an absolutely delicious dressing and of course, it can also be used as a dip. It's rich, creamy and full of flavor (and calories!).

Ingredients

  • 1/2 cup mayonnaise (use a great mayo like Duke's or make it fresh)
  • 1/2 cup olive oil (great ingredients make great food, use a really great Extra Virgin Olive Oil)
  • 2 Tablespoons red wine vinegar
  • 2 teaspoons lemon juice
  • 1 teaspoon anchovy paste (available in a tube at your grocer, adds a rich background flavor, sub Worcestershire Sauce in a pinch)
  • 1 scallion diced very fine (finely chopped or grated onion is OK too, about a tablespoon)
  • 1 cup+ grated Parmesan cheese, add more as needed to get the consistency you like, also feel free to mix it up with some Pecorino and/or Asiago
  • 1 tablespoon+ finely chopped parsley
  • 2 Garlic cloves crushed
  • 2 teaspoons sugar
  • ½ teaspoon salt
  • 1 teaspoon dried oregano
  • ½ teaspoon coarse ground black pepper
