Summer Hash
A simple and delicious mash-up of Summer goodies that complement any summer meal.
Ingredients
- 3 ears Sweet Corn, kernels removed from the cob (remove uncooked).
- 1 medium or 2 small zucchini, summer or heirloom squash, sliced into thin half-moons.
- ½ cup sweet onion diced
- ¼ cup red or green bell pepper diced
- 3 garlic cloves crushed
- ¼ cup chopped parsley, divided
- 2 tablespoons of olive oil
- 1 tablespoon butter
- Salt and pepper to taste
- ½ teaspoon oregano

Pan-roasting the corn is what makes this dish special. Warm a nonstick pan on medium heat (do not add any oil or butter) and cook the raw corn kernels until they start to caramelize, keep stirring. They may brown and stick just a little, that’s fine. Remove from pan and set aside once caramelized.
Add the oil to the pan then cook the remaining vegetables over medium-high heat. Stirring frequently. Once the squash has browned add the salt, pepper, oregano, garlic, and half the parsley, stir and cook for 2 more minutes. Lower the heat and add the corn back in along with the butter and remaining parsley.
Serving Information
This is a superb side dish for any summer meal, especially grilled chicken or steak. Mix and match any other veggies you have into this dish.
