Polaris is a new beefsteak tomato. Bred by Karen Olivier (Northern Gardner). Ripe fruits are deep burgundy in color with a velvety soft core. Polaris is a vigorous and productive "potato-leaf" variety which is relatively early. Flattened fruits are excellent for use on sandwiches, as they do not have excess gel that will completely soak the bread.
